                      Free Legal Aid Clinic to be Held Jan. 11

    The West Custer County Library will be accepting reservations once again for the monthly free legal clinic for persons that don’t have an attorney.  Please contact the library at 719-783-9138, to be added to the signup sheet for the Wednesday, January 11 consultations. 
     By pre-arranged scheduling, volunteer attorneys will assist one-on-one, via computer link, in answering questions, helping fill out forms, and explaining the process and procedure for civil legal issues including family law, civil litigation, property law, probate law, collections, appeals, landlord-tenant law, veteran’s benefits, and civil protection orders.  The volunteer attorneys, however, do not represent you just because they help you at this clinic.  This clinic is information-only and is not a substitute for legal representation.  You have the right to retain an attorney of your choice at any time, and are advised to do so.

Let's Talk Chia Seeds!

​     Let’s talk chia seeds. I know right now you are things chia pets, and well, yes, basically the same thing. So why is everyone eating chia seeds these days?
 
     Chia seeds are nutrient powerhouses!! They are an excellent source of Omega-3 fatty acids, rich in antioxidants, and a great source of calcium, fiber, and iron!! Omega-3 fatty acids help raise your good cholesterol and reduce your chance of stroke and heart attacks!! 
 
     One ounce of seeds has 5.6 grams of protein and 18 percent of your daily calcium needs!  They have 10 grams of fiber, which is almost half of your daily fiber needs, one thing that Americans are not getting enough of! The seeds can also be soaked and used to replace eggs in a vegan diet. 
 
     Chia seeds can be purchased at just about any grocery store. They may seem expensive, but a little goes a long way!! They should be stored in the refrigerator to stay fresh. 
 
     Now, what will you do with these healthy little seeds? You can add them to your cereal, sprinkle them on yogurt, blend them in smoothies, use them to make jam, or even make chia seed pudding! Here are some recipes to get you started:
 
Here is a base recipe for
 
 chia seed pudding:
2 tablespoon chia seeds
1/2 cup almond milk or milk of choice
1 teaspoon honey or other sweetener, optional
Strawberries or other fruits for topping
Instructions:
Pour ingredients into a jar and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping. Cover the jar and store in fridge overnight or for at least 2 hours.When you're ready to eat it, top with your favorite fruit and enjoy cold!
 
Overnight oats are another great way to use chia seeds!!
 
Here is the base for overnight oats:
 
  • ½ cup rolled old fashioned oats
  • ½ cup milk of choice
  • ¼ cup non-fat Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon sweetener of choice honey or maple syrup (optional)
  • 1/4 teaspoon vanilla extract
  • Mix and refrigerate overnight. A mason jar is great to use for this purpose.
  • Then mix up the flavors with these different combinations you can add to the base, or get creative and come up with your own. 
  • Peanut Butter & Jelly
  • 1 tablespoon strawberry jam (no added sugar kind)
  • 1 tablespoon natural peanut butter
  • ¼ cup diced strawberries
  • 2 tablespoons peanuts crushed

  • Apple Pie
  • 1/4 cup diced apples
  • 1 tablespoon pecans chopped
  • 2 teaspoons maple syrup
  • 1/4 teaspoon ground cinnamon
How about a strawberry banana smoothie?
  • 2 cups frozen strawberries
  • 1 banana
  • 1 cup milk of choice
  • 2 Tbsp chia seeds
Blend and enjoy! Makes 2 servings!!
